why the heck haven't i made these before![p]this is what happens when the fatties are too close to the rib roast!

    Rick's Tropical Delight,[p]Lookin' good man....I guess now is a either a bad time or a good time to introduce you to another little barbecue secret: Armadillo Eggs. If you enjoy drinkin' beer, smokin' fatties, and eatin' ABT's, you are rounding third and headed for home....[p]An armadillo egg is a seeded jalapeno stuffed with creme cheese and wrapped with sausage of your choice and molded in the shape on an egg. If you want to go a little further mix yellow food coloring into the creme cheese to make the yolk yeller. Great presentation when sliced. These can be cooked at barbecue temperatures just like a fatty but only take 1 to 2 hours depending on size. You have to let them rest and set-up for a while before slicing so the yolk is not runny.[p]Other versions call for mixing Bisquick into the sausage as a binder OR dipping the "eggs" in egg then rolling in Shake-N-Bake. For me the binder works okay, but the coated ones need a higher temp to crisp up, I don't care for them.[p]~thirdeye~[p]

  • Rick's Tropical Delight, OK I am at a total loss! WHAT IS A FATTIE? Is it a sausage roll or a meatloaf roll? Forgive me for my ignorance ahead of time! But it looks good and I would like to try my hand at them!

    it's just a one pound log of your favorite sausage, rolled in your rub of choice and smoked in the egg for about 3 hours at 250. these are jimmy dean sausage tubes. remove plastic wrap and roll in rub spread on a plate and into the egg it goes.[p]<img src=http://my.erinet.com/~pnsonr/biggreenegg/16dec06_2-010.jpg>[p]i learned it from these great people in here and i'll tell you what... i'll be making them every chance i get from now on!

    my friends did the roast in their oven. the whole time i was thinking how good it coulda been in my egg. i might have even told them that once or twice or three times....
