The 5+ pounder went on at 6am this morning and got to 168 around 11am. I foiled it with apple juice and put it back on...dome steady at 225. It hit 198 at 1:15 (sooner than I expected)and into the cooler it went. Checked it about 5pm and temp was getting kinda low so decided to warm it in the oven(still foiled). Brisket had a great taste and appearance... 1/4" smoke ring... but it was a little dry. No complaints about the taste but hoped for a little moister. Do you think the 30 minutes in the oven did me in? Overall, I was very pleased for my first brisket and learned a few things I will do different next time. Thanks to all who gave provided assistance for this cook.
I'll try to get some pics next time.
