Trex, Reverse Trex or Bath method ??????

I have some 1 1/2" NY strips for dinner tonight. Have not tried the bath method. What is your favorite way to cook a good steak ???[p]Any suggestions on the bath method ???

i do the strips with the hot tub method....[p]much the same as reverse Trex, in that you are sorta preheating. [p]but there's less "well-done" for the outer portion, even with a scorching sear. it gives me the largest portion of med-rare interior

Memphis,[p]I would follow the t-rex method for those.[p]I trex and I like it. I have never reverse seared, because I like trex style. I have done the hot tub, but that was designed to help tough meats to be more tender. You don't have that issue with the 1 1/2 inch strips.[p]Oil it.
rub it.
sear it.

Memphis,[p]I like the TRex method because of the control it gives. Sear it, bring the BGE temperature down to below 400F and then finish it off with a probe in it so that I can pull it when the interior gets to 125F. The problem with the reverse TRex, as I see it, is that you can't monitor the steak's internal temperature during the sear because the high egg temperature will fry the probe leads so it's difficult to gauge the proper doneness.

for a good steak i would still lean towards the trex. it can give the uniform center that most are looking for, and for larger pieces like the one shown, a roasting temp down around 350 instead of the 400 helps. i do like the bath method for rump roast steaks(new york sirloin around here) so it does work well for the cheaper cuts. i am not fond of the reverse method because if its over seared at the end, the char can be overpowering (with the trex method this can be fixed by a little scraping and pouring a little balsamic on it during the 20 min rest.

Never tried the reverse so I can't comment on it. I have trexd and liked it, but I'm a bather now, I just like the med/rare from surface to surface it gives. -RP

I saw your picture before and thought "what the heck." I took this and it just happens to fit nice and stable down in the firebox. Just made sure the lump level was below the grid. Man it works good for searing!!
