Roast that end up too dry

Every single roast that I've cooked (with a meat thermometer) ended up so dry that it was almost unedible. I usually rub the roast with seasoning, wait until it's reached the medium rare degree then remove it from the Egg. [p]I may never cook another roast again.Can anyone help me cook a roast that is medium rare? Please reply to peoplemove@aol.com [p]Thanks so much.

What temp does your thermo decide is medium rare? It should be around 130-135.[p]Are you resting the roast for 15 minutes or so after it comes off? You should be.[p]What kind of roast are you buying? Is it USDA Select or Choice? The Select roasts they have in many grocery stores are pretty inedible. Buy a USDA Choice sirloin tip roast.
