I bought a two pack of boston butts from Sam's Club and because of the way it was packaged (cryo-wrapped) I did not know till I opened it this morning that the bone had been removed. I am sure some of you have smoked this kind of butt before so I was just wondering how this will affect my cooking time? Every one I have ever smoked had the bone in and I usually shoot for 2 to 2 and half hours per pound at 250.
It's an 8 pounder and I put it on at 10 am this morning and got her rolling at a steady 250.
