    Sure not proud of the presentation in the link...really terrible, but the pork was great. The photo was a bacon wrapped tenderloin that was marinated (pre-wrapping)several hours in a mixture of Raspberry Chipotle 4 - 6 oz., mustard (about a Tbs.) and Balsamic Vinegar 2 - 4 oz. There is no magic amounts.[p]I like to marinade then season with favorite seasoning...I like just kosher salt and fresh cracked pepper...sometimes I wrap with bacon, other times I don't. Cook direct at 300+- until 145 internal. That gets tough since there is the thin end that gets done quicker.[p]That's why I've started doing them as medallions (other pics). I marinate them the same way then individually wrap and skewer. I think it's much easier to be consistent this way, but either way is great.[p]Hope this is what you're looking for.
