<p />First time TRexing sirloins strips... these were 1-1/4" thick. This is the "resting" period. Rubbed the steaks with EVOO and then some Zatarains Blackened Seasoning. Seared at 750 deg. for 90 secs on each side. Finished 'em off at about 400 deg for 3 minutes a side for medium/medium rare. Kids got to 'em before I could take a pic of the finished product.
