Dr. BBQ Big Time Championship Chicken Thighs - Help

<p />I just got done with my second cook of this receipe from Dr. BBQ's great book. My first cook I used Jumpin Jim's and Dr. BBQ's receipe and 4/5 tasters surveyed preferred the Dr. BBQ thighs. [p]I have had the same problem with both cooks - chewy and rubbery skin. Any suggestion on how to better crisp the skin. On my first attempt Jumpin' Jim's skin was much more rubbery (is that a word) than the Dr. BBQ receipe. This cook the skin was less chewy but still not what I am looking for. I am getting ready to compete in a cook off and would like to win my first time out. [p]5 other guys are cooking with me all on eggs and we are building a trailer similar to the Collins Brothers.
