Me and the wife had a bit too much fun last night so the briskett is on about 45 minutes later then expected. The egg is set at a perfect 250 degrees so I anticipate this hunk of meat to be ready around 6 or 7 tonight. Only a 4.25 pounder so it should be good and ready come dinner time.
