Whole Trout

I was at a tomatoe fest Saturday. The chef from Lida's (Kansas City, MO) cooked many things. Amoung the dishes was whole trout.[p]He cut along the backbone down to the stomach. He filled the caveties with herbs & added seasonings. He laid each trout on tomatoe slices, sprinkeled with olive oil & waapped them in foil. [p]He baked them @ 350 until done.[p]A tasty dish & easy to prepare.[p]
