In praise of the Plate Setter

I smoked my second butt this weekend-the first time it took 13 hours @ 245 degreed with hickory chips.
Then I got the plate setter and the wife picked me up some apple chunk. Wow....I cooked this one for 19 hours @210 degrees until the internal temp was 200. Now, the last butt was very good, but this one,...the smokey flavor and almost total absence of fat was incredible.
To anyone who's considering getting a plate setter for better indirect BBQ'ing.....DO IT!!!!
