Simple cook tonight, some chicken breast stuffed with fresh tomato and smoked Kit Calvert Wensleydale cheese, wrapped in bacon and tied. Cooked indirect at 170C/340F raised into the dome for about 40 mins, served with long stemmed broccoli. Lovely.

Cheers folks. For the next one I'm going to put goats cheese and wild garlic pesto sauce in the middle, should be a winner.

This looks great but we would wrap it with speck. Great smoky flavor and it gets crispy. It's also great on pizza and does not have that salt taste.
