OK!!! My company is coming about noon and we are planning to eat at 2pm. My 10# brisket that I calculated to be done at noon is done. Funny thing that I can't hear the dog when she wants to go out in the middle of the night, but I could hear the alarm on my BBQ Guru this am. I have it wrapped in foil and resting in the cooler, but how long can I keep it there. I want to go back to bed, and I know that it will be ok for a few hours, but how do I heat it back up? It seems soooooooooo tender now, and lot more that the first brisket that I did a few weeks ago.
