Chicken Nachos with DP Mole

Had some leftover grilled chicken. Chopped and into a hot skillet with some DP Mole. Melted some Velveeta with more Mole and some red pepper. Dumped in the chicken and cooked another minute. Poured the delicious goo over some tortilla chips. Made a great snack. Would have been much better with jalapeños and other good stuff but fridge was pretty bare. Thanks for looking.

    Enjoying my Mole rub. Made some Green Chile Chicken Enchiladas with it the other day......right on point. Those nacho's look outstanding.

    I really do like the Mole.
    It has been my go to rub for weekday leftovers. Nachos, quesadillas and tacos. Very flavorable and easy to spice up the heat if thats what you want. I like it way better than the 20 bottles of fajita rubs I have tried in the past.

    Most of the fajita rubs I've tried have been so-so. Sounds like I need to try some of this.
