Sunday Night Prime Rib

1st attempt with a 7 pound standing prime Rib roast. Very happy with results, with huge thanks to all the great posts and tips on the forum. And, that @RRP au jus was delish -- meat was sauced to a draw with some very sharp horseradish cream.
+ potatoes au gratin, shaved Brussels sprouts, and a very nice Willamett Valley Pinot Noir (Le Cadeau 2009) for a special family dinner with the in-laws and nephew while SWMBO is away.
Sadly, though, no meat survived for weeknight leftovers. That was NOT the plan!
