Pork Rind Wings! Sriracha Honey Lime. In the Style of Cluck/Oink

When pigs fly?

Friday:  separated 8 lbs of wings; sat on racks in fridge overnight
Saturday:  rolled through 3:1 mix of deez nuts:cornstarch; back on racks in fridge
Sunday:  pre-cook coating with pork rinds pulverized in the vitamix

Cooked indirect, 375+, on 2 racks high in dome.  20 minutes, then flip; 20 more minutes then sauced; 10 minutes for sauce to firm up.

Sauce was 3:2:2 sriracha:butter:honey + juice of 2 limes + soy sauce to taste.  Dip was ranch + honey + Dukes.

Lots of work.  Crispiest ever.  Best I've made so far.

    Nice!  They look great.  I did some tenders in an air fryer a few weeks back using crushed p-rinds. They were really good but yours look like a whole nutha level. 



    They changed the picture toolbar.  Now in addition to the attachment button there is an image button. If you want the pics inserted inline use the image button.  We can see them though- just have to click the thumbnails. 


    Which came first the chicken or the egg?  I egged the chicken and then I ate his leg.
