Slow Dayat the Chicken Ranch Calls For Cake

I woke this morning determined to cook some Dominican Cornbread. No, I've never cooked it before, or even eaten it. But I found the recipe some time back and it really sounded good. I certainly wasn't going to Dominica to find out how good. Plus, I just wanted to cook something on the Egg. 

I'll have the video of the Dominican Cornbread later. This is about what we did with the leftover coconut cream and shredded coconut. 

It surprised us how fast and easy this was to be so delicious. I wish I had cooked it on the Egg instead of the oven but the Dominican Cornbread was still in the Egg and I didn't want to light another Egg for something so simple as using a blueberry muffin mix.
