I recently discovered a turkey in my freezer. I thought I'd go ahead and get my turkey skills brushed off. After all, it's just over 2 months until the big event.
I forgot to get it brining last night, so I'm hoping the 5 hours this morning is enough. Shooting for 375. Apple wood smoke.

@KiterTodd - probe in the breast. Was getting close to 160 sooner than I was expecting, so I moved the probe to a different spot in the same breast. Temp dipped to 150. Left it there and pulled it when that hit 162. Never did probe the thigh.Large (sometimes wish it were an XL) in KS

@Eggdicted_Dawgfan - adequate? Dunno. I brine for the moisture retention as much as anything. This was certainly moist. Some of that comes from not overshooting the temp. Scored on that front this time. The beans were picked just a few hours before they were cooked...on the Egg, BTW...in a foil pouch.Large (sometimes wish it were an XL) in KS
