This was some of the best pulled pork I've ever had, felt compelled to share it with the group here...
Started with a 10 lb boston butt
- covered in olive oil and coarse sea salt, let marinade for 8 hours
- with apple wood, and mesquite wood, bring the egg up to indirect at 225
- put mesquite chips in the drip pan, along with apple cider vinegar
- while the grill is coming to temp, covered the butt liberally in your favorite rub
- put on the grill, let it go until you reach 170-180 internal
- took it off, layered bacon over the top, hit it with brown sugar and light amount of bbq sauce
- double wrap with aluminum foil, then put back on the grill for 2 hours
- took off the grill, wrapped in towels, then threw it in the cooler for 2 hours to rest
Have to say I even surprised myself on this one! Can't wait to do it again : )

Looks delicious! I'll be doing my first Boston Butt on a trial run for an AL game in October. I have to test the waters before committing to making one for the family at Christmas. Yours looks like it came out just right

I second the bark comment, great cook!“There are three rules that I live by: never get less than twelve hours sleep; never play cards with a guy who has the same first name as a city; and never get involved with a woman with a tattoo of a dagger on her body.”
