Alaskan Sockeye has finally arrived fresh in the Ozarks this year. Expensive as hell, but such a treat, with some DP Raging River, raised direct on the Mini. 

 

Done at 140. 

 

Plated with some local lettuce and an awesome pasta salad from a local market.
