Rib roast, SV mashed potatoes, salad, and fresh bread

Local place had rib roasts on sale for $7.89lb, so I snagged about a 4lb slab. Last night I did a dry brine consisted of salt, pepper, fresh garlic, and Meat Church Holy Cow.
SV arrived yesterday and wanted to test it out. Went with @Thatgrimguy method of mashed potatoes, and they turned out beautifully. I didn't even put much time into them after the bath.
Made probably my best loaf of fresh bread yet. Still have some work to do though. The crumb was great, but no height. I had great height, but when I sliced before placing in the oven, it deflated. Still great though.
Did a simple salad/wedge with onion, tomato, cucumber, bacon, and ranch. Thought I had some blue cheese, but didn't. Ranch is still good though.

3 - Going on the Egg. The fresh garlic was placed on top and I roasted the roast and garlic every so often and add butter too.

I used meat church holy cow for the first time. I liked it pretty well. I cooked mine a little more done than usual cuz mrs pharm prefers that.

Bad thing is, I was outside getting the roast finished up and my wife was to mash and finish up the potatoes, but as luck has it, little princess was getting fired up a little. Kenzie loved her day. Made her breakfast (pancakes, link sausage, bacon, hash browns, and eggs), got her a little gift (in a bag), and cooked her this dinner. With the bone in, it could be tricky, but I would say 4-5 servings. We ate three last night and have a big slab left over.------------------------------

I'm having issues with getting good height with my bread. As soon as I cut my slots, the sucker deflated. It rose a little bit more while in the oven.
I did this batch fresh. Mixed, let rise for 2 hours, then made two loaves from it. Maybe that was my problem. I'll try the refrigerated dough tonight maybe. I'm getting there, slowly but surely.------------------------------
