Prime rib bones

I buy prime ribs for work a couple of times a month. I usually buy bone out but occasionally I buy bone in.
I take the ribs off and bring them home and cook em up.
Im not a huuuuge fan of beef ribs, I don't like a lot of fat, but I don't mind a feed every once in a while. SWMBO loves them.
I had had a couple remnants of some rubs left so I blended them all blended together. Plow boys, some coarse Dizzy Dust, and a Cajun rub my wife bought me.
Plan on 275 for 4-5 hours, wrapping in foil at about hour 3-4 depending on the fat rendered out at that time. Once finished, half are sauced, I haven't decided in that yet.

Again for me beef ribs aren't my thing. Too much fat interlaced with succulent meat. -
