Craigs post about his quesadillas inspired me to thaw out some pulled pork too. Did these tonight on the blackstone with mex 4-cheese, scallions, and sour cream. Definetly a simple leftover meal hit--thanks Craig!Oh and a got turned on to this Palmetto Pale Ale thanks to Robin's friend Paul!

Looks great @Jeremiah !  I can't take credit for them though.  Plenty of people have done them before.  But yours is the prettiest I've seen!  Your blackstone did them justice!  Excellent!

@Jeremiah I have to agree with Dyal.....those are gorgeous.....and @Dyal_SC  is da Bomb. I think that is good in the younger generation lingo. If it isn't, it's not what I intended.

That does look great, and I have some pulled pork in the fridge. Not sure what cheese might be there, but I do know there are tortillas. And I haven't had dinner tonight. I don't have a Blackstone griddle, but I do have a stove and a griddle pan. Hmmm......

Ok, not quite on the same level as yours, but here's what I managed to put together from our fridge contents. Corn tortilla, refried beans, pulled pork, cheese, pickled jalapenos. Nuked for about 30 seconds to warm it, then got it crispy on a hot pan on the stove. Topped with salsa.


Hit the spot. Thanks for the inspiration.

We've been hitting the quesadillas recently too. They are a great meal that's simple and tasty.
