Craigs post about his quesadillas inspired me to thaw out some pulled pork too. Did these tonight on the blackstone with mex 4-cheese, scallions, and sour cream. Definetly a simple leftover meal hit--thanks Craig!Oh and a got turned on to this Palmetto Pale Ale thanks to Robin's friend Paul!

That does look great, and I have some pulled pork in the fridge. Not sure what cheese might be there, but I do know there are tortillas. And I haven't had dinner tonight. I don't have a Blackstone griddle, but I do have a stove and a griddle pan. Hmmm......They/Them

Ok, not quite on the same level as yours, but here's what I managed to put together from our fridge contents. Corn tortilla, refried beans, pulled pork, cheese, pickled jalapenos. Nuked for about 30 seconds to warm it, then got it crispy on a hot pan on the stove. Topped with salsa.

Large BGE & Mini Max for the wok. A few old camp Dutch ovens and a wood fired oven. LSG 24” cabinet offset smoker. There are a few paella pans and a Patagonia cross in the barn. A curing chamber for bacterial transformation of meats...
