I believe you will need the nest so you can create an air gap between SS and the ceramics. I think I remember @Tspud1 saying they recommended this setup for his carts

  • You definitely want to use the table nest.  here is mine, note the granite on top also under the minimax.   My cart is 5-6 years old, finish is still excellent. but I keep it clean and wiped down.  These carts are expensive but damn good quality.

I have the Torch 54 for my XL on a nest sitting in my cart. Even though it is sitting on metal they recommended a nest for an air gap. As for the top mine is a copper color that I try to avoid anything hot on it. It can scratch so you need to be careful with it. I was looking a stainless as an alternative but even that can scratch plus it gets very hot during the summer. I have a small cheap table that I use to place my hot items on when needed.

My wife bought the bge island, made by challenger, three years ago and the top still looks new. I run my Mini Max on it without any problems and have set my eggspander with the platesetter on while changing setup. I have not put the platesetter directly onto it. That goes on the sliding shelf and out of the way.
