Brisket from Walmart

Does anyone have any experience with buying brisket from Walmart? They had whole untrimmed for only $2.46/lb. I was a little skeptical but bought one to give it a try. Pic shown below.

The cryovac bag should be marked with the name of the packing house and grade?
usually eith JB Swift or Excel.
i have found Prime at Walmart in the past, but my local Walmart stopped carrying packers... -
Flip it upaide down. There should be a USDA stamp (several actually) that says either Select, Choice, or Prime. If it says none of these, it is "ungraded", meaning below Select. This is unusual to find in the grocery store.They/Them

Excel is an Excel-lent brand. I once worked for them in Witchita, so I know the quality herds they start with. I don't recall doing any other briskets. They also are the primary supplier for The Capital Grill (high-end steakhouse owned by Longhorn and analogous to Ruth's Chris or Mortons), Safeway (Rancher's Choice), Kroger and whole host of others. And if you have ever eaten at Arby's, BK, Steak-n-Shake or Sonic, you have had their products.

That's the brand and grade I always get from Walmart. They always turn out great. Just smoked one up for a bunch of family on Halloween day. Everyone loved it... even the kiddos.

Nothing wrong with that at all. If you happen to have a Sam's club near you they usually carry Angus choice grade for about the same price. Angus is just a breed of cattle so it is the same grade, but I think they are a little better.Which came first the chicken or the egg? I egged the chicken and then I ate his leg.

This is a 10lb brisket but cut off approx 4lbs of fat and didn't touch the fat cap. How long will it smoke to be ready?

What is the deckle? Is that the tip? If so, should that be cut off and smoked at the same time? Also, where should the temp probe be placed. In the flat or tip? 195f desired temp?
