Stuffed Pork Loin and Roasted Potatoes

Stuffed with a whole bag of baby spinach, cream cheese, Italian sausage, and sun-dried tomatoes.




Wrapped in prosciutto and seasoned with Lovelace Cafe Peach BBQ rub inside and out.

It was about a 5 lb pork loin, cooked indirect at 375-400* for almost 2 hrs until 140* internal in the pork and 126* in the stuffing. I was worried the sausage wouldn't be done but didn't want to over do the pork. Turned out perfect after resting on the cutting board for about 15 min. Drizzled with a balsamic dressing and served. It was great. Thanks for looking.
