Best method for Boston butt country style ribs...

How do you guys like to cook these? Got a couple packs for Sunday football.

My ribs always come out awesome, but for some reason these country ribs turn out tough for me. Advise or tips on these

I've not cooked them but asked the butcher recently and he said do it just like a slab of st. louis ribs - you can go low and slow or turbo I suppose.New Albany, Ohio

I do those as follows (I think this is a reverse sear?): season with a rub of your choice, smoke indirect at 250 until internal temp of 180, then sear direct over very high heat until nicely browned.

Do them low and slow like a butt and remove when Internal hits about 194+. Lots of rub too.

My Kroger sells these country style ribs for $3.49-$3.99/lb. When they run boston butts on sale for $1.29/lb. I get one and have the butcher slice it about 1.5" . I'll have enough country style ribs for 2 or 3 cooks and save a few bucks.
