Ain't Momma's Meat Loaf

I originally found this recipe ("Ain't Momma's Meat Loaf") here or on the original forum, but it comes from Smoke & Spice.  The other times I've made it I followed the directions and cooked it for 45 minutes in a loaf pan, then carefully took it out and put it directly on the grid.  This time I decided I'd just cook it without the loaf pan.  It wasn't dry, was still plenty moist, had a wonderful flavor. It's my wife's favorite meat loaf, and she's been asking for it for a while.

The version I got from one of the EggHead Forums was the same except for a coating with DP Cow Lick seasoning, which I forgot in the first photo, but added a little later when I remembered it.



At the end I slathered it with the Jimmy Beal's Wild Boar Soul sauce I made a day or so ago (see another post) and then finished it for half an hour.

    I love meatloaf, bland as it seems like it is.  I've made several different recipes, egged and non-egged.  A mystery to me is that I've cooked the same recipes more than once, but one time it's wonderful and another time it's not so great. I swear I'm making it the same way, and I keep wondering if it's the meat.  Like maybe one time the pork is a lot fattier, or a lot leaner, or something. A few times when pork and beef and veal were called for I've used a pre-mixed meat loaf mix from the store, and maybe it was just the worst scraps they had or something, I don't know.

    But I've made this recipe 2 or 3 times, now, and it's been good each time.  This is the only one I've egged, but I keep thinking of trying one of the other ones on the Egg, too, like Ina Garten's "1770 House" meat loaf, or Paul Prudhomme's "Midtown Meat Loaf."  I have SIX MORE meat loaf recipes that looked good to me that I haven't even tried, yet :) -- yep, I guess I like meat loaf.

    My wife doesn't exactly dislike meat loaf that is not egged, but it's very, very clear, this recipe on the Egg is far and away her favorite.
