I basically followed the Naked Whiz recipe and was really pleased with the results. Paella is much easier to cook the second time.

Large BGE & Mini Max for the wok. A few old camp Dutch ovens and a wood fired oven. LSG 24” cabinet offset smoker. There are a few paella pans and a Patagonia cross in the barn. A curing chamber for bacterial transformation of meats...

Did you create the elusive Socarrat? Thats the name for the bottom layer of rice that yields a golden caramelized crust. Our neighboor is from Spain, and has intimidated me with this talk for years.Columbus, OH

Is that a 13.5 or 14" paella pan? (assuming you have a LBGE)
Is there a reason you cooked direct as opposed to raised direct?
Any issues with burning?
Finally - did you keep the bottom vent closed once you got to temp?
Oh yeah, one more question...do you bother with wood chunks for this?

@KiterTodd- if you are looking for a paella pan for the LBGE check out Typhoon paella pans. The handles are vertical so you can get a 15" pan on the grid. (I was pointed to that pan by @Little_Steven). I adjust the bottom vent to keep the temp where I want it during the cook. And apologies for the partial hi-jack.Louisville; Rolling smoke in the neighbourhood. # 38 for the win. Life is too short for light/lite beer! Seems I'm livin in a transitional period. -

@KiterTodd - you could do that but just be careful and you may want to heat the welds before you start the bend process. Don't ask me how I know...
Regardless, a great cook-lots of prep work and attention during the cook but quite a reward when finished. FWIW-Louisville; Rolling smoke in the neighbourhood. # 38 for the win. Life is too short for light/lite beer! Seems I'm livin in a transitional period. -

@KiterTodd the big central head of garlic is delicious after it cooks. I don't recall the pan size but it is not a perfect fit; I tried bending the handles but actually warped the pan some (handles didn't budge!).
@NDG I got just a bit of soccarat, I probably pulled a minute or two too early.
