Smoked Trout and Moose pepperettes.

Got some Rainbow trout fillets at the local grocery store today and decided to smoke them with Alder wood. Coated in brown sugar and balsamic and topped with roasted almonds. Smoked indirect @350 for about 30 mins. Since I had the smoker going and haven't used the raised grid much, I threw on some frozen Moose pepperettes that my in-laws gave me a while back. Pepperettes turned out OK but the trout turned out FANTASTIC!!!!
Sorry the pics aren't in order...can't seem to figure that out.
