We just did one last night and it was pretty damn good. I don't think you can go wrong with anything you decide on. I think like an apple/sage/breadcrumb/raisin would be really good. I have seen people go the Italian route too.

My wife and I love "meditteraneany" stuffed chicken and pork. Here is a stuffed meditteranean deboned chicken we did awhile back.
