A defrosted frozen and marinaded Rack of Lamb from Trader Joe's Jackie and I just love these
On the BGE @ 400*
Coming off @ 124* interior about 18 minutes
I would say thats just right with a ten minute rest and yes it was delicious

my favorite cut of lamb. i personally don't like the fat when it blackens, but that's me.
i have lately gone over to simply drying it a couple days in the fridge and then roasting it at semi-lower temps. beautiful brown crust, perfect temps.
spendy chunk of meat. about the only meat i will order in a restaurant because it's sometimes cheaper to order it out thank cook it at home....

Nice. Sam's Club has these, but I've only gotten the the lamb chops, which look like little T-Bones. They've been good. How'd ya do that marinade, if you care to share?
