Glazed Bacon Wrapped Sockeye with Roasted Sprouts

 I took 2 Sockeye Filets skinned and split in half, rubbed with Tsunami Spin, tightly wrapped in bacon and hit with Tsunami again 


Put it them on the small @400 indirect with a lil cherry. While the Sockeye was getting happy I halved up some sprouts,sliced a sweet onion and mixed it with balsamic, EVOO and garlic. I wanted it more roasted than grillEd so on the large in a pan


Sockeye is ready to go direct and get glazed with a sorghum, coarse ground mustard and lemon zest 


Time to eat.  


I was extremely happy with the flavor of the fish. It was still really moist but just a bit overdone for my taste.  Next time I will cook the bacon just a little before I wrap the filets.  The glaze was really good.
