I wanted to elaborate a little more now that I'm on a computer...
We fished on Sunday with some friends, and wanted to make sure we ate it fresh. After giving a few bags to coworkers and family, I decided we were going to try something a little different. I knew I wanted grits, but also wanted a cajun blackened fish...So, one thing led to another and this is what I came up with.
Blackened Wahoo (Tony Chacheres) on the egg/CI skillet, over a bed of grits, topped with a mandarin orange salsa and sriracha. The flavor profile was out of this world! A lot going on, but it all blended very well. And it was definitely cajun/spicy, which I love! But the grits and salsa balanced it very well.
The seared wahoo is just that. It rivals yellowfin tuna. Seared with a heavy coating of Tony's in a burning hot skillet. About 15 seconds per side, wrap in plastic wrap, and chill in fridge for an hour or two....Serve with soy/wasabi dip.
