Prime Filet - Reverse Sear

Well I tried some Prime Filet's from Fresh Market.  I usually get Strips or Ribeye's so this was a change-up (The plated picture is a bad angle and makes them look skinny they were about 1 3/4 or 2 inches thick.  Talk about good. We got 2 prime and 2 choice.  My wife likes her's Medium rare so I pulled at 100 and it ended up running up to 116 resting on the plate waiting for the sear part.  Used a little McCormick's steak seasoning and for sides had some green beans and mushrooms  A good Tuesday night dinner for sure.  The choice will be a topper for a lunch salad.  Oh, and the yellow haze on the temp shot is the pollen we live with in the spring time in Atlanta.
