nothing fancy, trying lard in a cast iron on the egg. We will see if it does anything different.

Are you doing the spatch in the CI pan? Haven't seen that before - definitely interested in your finished pics... My spatches are usually direct, but that CI and lard could give you some nice crispyness on the edges (and maybe on the skin if you give it a quick flip at the end?).Mike - (1)LBGE, HeaterMeter v4.2.4

Curious how this turns out. I've never added any extra grease when cooking a whole chicken in the CI-----------------------------------------analyze adapt overcome2008 -Large BGE. 2013- Small BGE and 2015 - Mini. Henderson, Ky.

Done, took longer as I did not preheat the cast iron. Taste = awesome. I slathered some bbq sauce on it then flipped it at the end. The fat of the lard adds almost a creaminess of flavor, hard to describe.
Would i do it again? For sure. Good change of pace.
