Bordeaux Marinated Tri-tip

The secret sauce:

    • 3lb tri-tip
    • 2 cups of a good bordeaux
    • 1/4 cup extra virgin olive oil
    • 3 cloves minced garlic
    • 2 tbsp fresh ground black pepper
    • 2 tbsp kosher salt
    • 1 tbsp chili powder
    • 1 tbsp honey
Mix all of the marinade ingredients really well and then pour them over the tri-tip in a ziploc bag (or even better in a vacuum sealed bag), and force the air out. Leave it in the fridge, turning once per day for two days.

Did this one sous vide with a quick hit on the egg for the sear. Absolutely phenomenal.

      Sounds good- I image the honey put a nice crust on the tri tip. Manage to snap any pics?  Just noticed your home town- I go there a few times a year. Always liked sienna and la masseria...
