Salado Eggfest Smoked Cheese

Getting my Cajun groove on making smoked cheese balls for the Salado Eggfest After-Party. Spring Chicken smoked this cheese about 5 weeks ago and it smells so good. Adding Mayo, Italian Olive Salad Mix from Rouses in New Orleans and Arnaud's Creole mustard.....mmmmmm
