Pork Tenderloin

I was craving a meal from one of my favorite restaurants in Memphis called The Majestic Grill.  It is a pork tenderloin with a maple cream sauce, sugar glazed carrots, tobacco onions, and mashed potatoes.  I started to do some research for the recipes when I found this little gem: http://www.memphismagazine.com/March-2007/Pork-Tenderloin/  It was just about spot on when the actual chef makes it.  The only thing I would suggest is to maybe only do have of the shallot and double the amount of the maple syrup.  Other than that, fantastic!  Even the wife said if was about as spot on as good be.
I was also drinking YumYum from Three Floyds Brewery.  I have yet to try a beer of theirs that I did not like.  If you are fortunate to find some, buy it.  You won't regret it.
