superbowl brisket

wasnt too impressed with a citrus marinated brisket but i think it had to do more with foiling when i was running out of time. 11 hours at 250 and it was still at 165 internal with a calibrated gage and a tiny 2.8 pound flat. i hate the texture of foiled brisket, oh well, next time i inject half way thru the cook. dont know about that last play being a bad call, but it sure was a great catch
