OT-- My Take on NY meal sans egg

OT as not cooked on egg--- eggs were smoking bacon so I decided to make pork schnitzel with homemade cheese sauce to accompany my homegrown collards, black eyes peas and cornbread. Nice change of pace from our traditional ham or pulled pork for NY.

Using a MBGE,woo/w stone,livin' in Hayward California," The Heart Of The Bay " -
Just made a standard roux then 1 cup heavy cream. Whisk on medium for 3 mins or so to thicken, then add a 1/2 cup of cheese. I just use what I have-- this time was a combo of sharp white cheddar and mozzarella. Stir in cheese and salt to taste. If you really want to kick it up a notch add some diced jalapeño.
