Acorn Squash pineapple head and butter, 2 8oz Wagu ribeyes from SRF SVed at 118 for 2 hours then in the CI pan at 550 for 2 minutes a side which took them to 135 (I should have pulled at 90 seconds a side) they rested 6/8 minutes and served with basmati rice. My wife said the steak was the best I have ever made (probably 5 degrees over done for me)
