Christmas Turkey

Did my xmas turkey yesterday. 16lb organic bird. Spatchcocked and cooked with the mad max recipe. Cooked indirect at 375. Only took about 2 hrs to cook. So juicy that when I stuck my thermapop in the beast juice should out all over my foot. Would have liked the skin slightly crisper so next time I think I'll go 400 or try to go higher up in the dome
