Poor man's stuffed chops

I've been getting thin center cut pork chops on sale at Kroger for $3 recently. Did a simple stuffing of equal parts bread, celery, onion. S&P. layered between two thin chops and tied. Hit with some Dizzy Pig steak rub. Absolutely fantastic. Sorry no finished pics.
Richmond and Mathews County, VA. Large BGE, Weber gas, little Weber charcoal. Vintage ManGrates. Little reddish portable kamado that shall remain nameless here.  Very Extremely Stable Genius.
