Marinated Skirt Steak With Garlic and Cilantro

Recipe - Adam Perry Lang, Serious Barbecue (book highly recommended)

I wanted some steak fajitas and the recipe on page 141 looked interesting.  Didn't have Orange and lime juice so substituted with lemon.

Skirt Steak marinated (3 hours) and seasoned.

Just about to snap and an amber came up and got me inside the nose ...ouch!

Got one here, just turned over.

Resting in a bed of butter, lemon juice and cilantro (yum!)

Ready to eat!

It was great!  tasted really good even on it's own.   The meat was a little tough but not unbearable.   Next time I will get the recommended Orange and Lime juice and will see if that helps.

Looks good to me!!  I have a hard time not overcooking something that is that thin.

Going to be working on a skirt steak today - was thinking of low temp without smoking wood to tenderize it a bit... this cut can be tricky.

Hope I can keep those amber embers out of my nose.
