This bird isn't flying

cactus_darrell : http://eggheadforum.com/discussion/1173458/turkey-brine-the-best-i-ever-had#latestSGHhttp://eggheadforum.com/discussion/1166544/my-go-to-cajun-turkey-set-up#latest  But here is where things have begun to go askew.  First problem, my turkey rack and pan it fit in wouldn't allow the dome to close.  Why hadn't I checked that before, I don't know?  Nothing to do but remove the grate and set the rack and pan onto the PS.  Luckily, (occasionally something does go right), I had seen a post with a similar problem and 1/2" copper fittings had been used to keep the pan from being directly on the PS.  I had them on hand.  Got that corrected.  Next problem.  The bird was a bit big.  Almost 16 lbs. on a medium.  Dome gauge was touching, though the turkey did seem to fit everywhere else.  Removed the clip and slipped it out part way.  But now I don't think I am getting a good dome reading.  Seems to be 300 however I adjust the vents.  Have pulled it out more and now I can't get it above 250   Don't have a maverick, just a thermopen.  Think I'll just drink a few beers, stick the pen in now and again, and let it go till 155.  Seems to work for most other things.  If it doesn't suit the guests, well, they can just have another drink and it will be OK..
