Simple side for simple burgers

Hi everyone, looking at the forum this AM and it definitely seems like it was another burger weekend! I did burgers Sunday for lunch, and while thy weren't really anything to write home about, I did think of myself a new way to make a classic burger side:
Paella pan, meet French fries. French fries, meet paella pan:

Hands down - my new favorite way to cook fries at home. Put a layer of oil in the bottom (thin layer), and mix them around. They're about as close to classic deep fried French fries as you can get without ACTUALLY deep frying them.

Actually I had set up my egg to cook at around 500 or so, as I was about to do burgers. I just left the dome wide open, and the bottom vent open. I was looking for more of a deep fry in hot oil than a baked French fry, so kept it really hot.I'm not totally sure how hot the egg got while I was cooking, but about 45 seconds after removing the paella pan, it was around 700+
