Saturday Spare Ribs
Heading to my BIL for some clams and a bon fire. Decided to do some spare ribs to bring along; no luck trying to find a brisket this morning.
Bad Byron's rubbed and started a little ball of coals in the middle to see if that will help keep my temps lower. Oak and hickory for smoke.

Nice.... I know better but a few days ago in Aspen went into a praised smokehouse rib place (winner of 40 comp's, etc). Not good. I just can't eat ribs out anymore, and ribs are #1 with me. I like them dry and a little bit.Salado TX & 30A FL: Egg Family: 3 Large and a very well used Mini, added a Mini Max when they came out (I'm good for now). Plus a couple Pit Boss Pellet Smokers.

My wife's working today and I am bored. I might hafta go pickup a rack of ribs myself after seeing yours. Also the bonfire sounds nice. May hafta pickup some firewood too.

For many years I have approached any restaurant with the following rule; "Never order anything in a restaurant that you cook at home." Definitely leads to different selections. FWIW-Louisville; Rolling smoke in the neighbourhood. # 38 for the win. Life is too short for light/lite beer! Seems I'm livin in a transitional period.

Home from my hair cut to find the egg sitting right were I expected... Temp recovered to where it was before I put the ribs on with no issue. Nice and solid, and no controller in sight

Something I learned many years ago (you look for good tips as you ring up laps around the sun:))-I rotate the BGE dome thermo so the desired/target cooking temp is at 12 o'clock. That way a quick glance and I know which way the cook is tending. I always make sure to pull out on the thermo when rotating so as not to mess with the calibration nut. It don't get much better, except maybe brisket camp...

It's absolute torture looking at these delicious ribs! I'm here on the roof at a Carrabba's getting rained on. B-). No complaints though I'm on call and have a lot of work (In my mind this is an awesome problem to have :-) ).
Enjoy! OBW I bought a Fifth of the good stuff. Wife said get me some Kahlúa, Rum Chata. And also requested smooth excellent Vodka...I never had it but Titos seemed to fit that bill. B-)

Ribs look good so far Hap. You and @Zarcon are making me want to do ribs. It'll be Tuesday before I can though. We'll see. A,local grocery store has butts on sale for $1.78 a pound, was gonna go pick up a couple on Tuesday. Looks like I'll be getting ribs too.

Here they are after the 3rd and final saucing. Ready to come off and rest in about 30min. Going on a cookie sheet and covered in foil then into a low (170°) oven...
Seem like my best yet so far...
