Left over pork chops recipe question

I grilled 7 Costco chops the other night raised direct and they were excellent but with myself and two women there are three left over. Any suggestions as to a recipe to use them in as I really don't want to just nuke. They are never as good reheated. Next time I will split package and keep a few back for another round of grilling as there will only be two of us after the niece leaves Saturday.

I was thinking the same thing as @fishlessman. I had a bunch of leftover chops and diced them up to use for egg rolls and fried rice.They/Them

I haven't done it with pork chops, but I have done it with pulled pork, leftover steak, leftover tri-tip, chicken and it is very good.
