Starts with my super secret classified sweet rub. The only cooking item for which I actually, religiously follow the recipe.
Going to do this one a step at a time. Setting up for the overnight cure, and will wrap it up tomorrow. Look for more pics.

Set up for over night. Rub goes on heavy, and the filets sit uncovered in the garage fridge. Before smoking you squeegee off the rub with your finger. Leaves a translucent deep red covered flesh.

Finale, a little messy because we went piranha on it. Chilled salmon, romaine lettuce, lemon, cream cheese, onions, Crystal, Makoto Ginger, each to his own.
Boy was this good.
